29 May, 2024Among the different novelties of the Michelin Guide Spain 2024, Âme restaurant is a very special one. This is the second culinary project of Joey Attieh and Pachi Rodríguez, two entrepreneurs who met while studying at EUHT StPOL and who have made it through Barcelona’s gastronomic scene. In just six years they have gone from never having set foot in a kitchen to being highlighted in the most important culinary guide. In 2021, they opened Albé, a Lebanese restaurant that has already earned them recognition from different foodie guides. After a couple of years, they decided to open yet another concept: Âme, a French cuisine restaurant where duck is the main ingredient.
The duo’s passion for France, their Lebanese and Venezuelan origins, and their academic and professional background make up the âme (soul) of this space. The Michelin Guide Spain 2024 highlights from its menu a crêpe de mar (red prawn pil-pil from Palamós with crunchy crêpe), the Brothy duck rice (rice from the Ebro Delta, duck confit and artichokes from Prat) and a pudding (medjool dates, caramel beurre salée, tonka chantilly).
A friendship forged in Sant Pol de Mar
Joey and Pachi, students of the Master’s in Culinary Arts and Kitchen Management, met at EUHT StPOL in 2019, they quickly connected and knew that they could form a fantastic tandem in gastronomy.
And the fact that the Sant Pol de Mar Hotel-School campus is relatively small but very international is perfect for creating a breeding ground for networking, the exchange of ideas and the possibility of developing future projects that can be carried out.

With almost 60 years of experience, the Sant Pol School of Hospitality and Culinary Management has trained many generations of professionals in the hospitality sector in its different fields. In the gastronomic field, currently, up to 5 chefs hold Michelin stars, while many others have received different recognitions, as is the case of the Maito restaurant, by chef Mario Castrellón, recognized as the #6 best restaurant in Latin America by The50Best.
