5 February, 2021In addition to the Bo.Tic chef and the entire team of this two-Michelin star restaurant, who surely can now answer this question are the students of the Master in Culinary Arts and Kitchen Management of EUHT StPOL .
The reason: they have attended a masterclass by the chef Albert Sastregener who has explained not only the characteristics of his cuisine, but also the elaboration process of all the dishes included in the so-called “Chef’s Menu”.
It is not the first time that the chef of the Bo.Tic restaurant visits EUHT StPOL to give a masterclass to the students of the Master in Culinary Arts and Kitchen Management. But it is the first time that he comes as the chef of one of the 38 restaurants recognized with two stars by the Michelin Guide Spain and Portugal 2021.
In fact, Bo.Tic (Corçà, Girona) is one of the three restaurants that this year 2021 have added their second Michelin star. They have received it after 13 years of experience, with a creative cuisine rooted in the essence of traditional Catalan recipes.
“We believed that the two Michelin stars are a recognition for the path that we have already done and the projection that we have, not for what we will do in the future,” says Bo.Tic’s chef, Albert Sastregener, who does not hide his joy for having received the second Michelin star.
The secret to get here? The chef is clear: “We are not superheroes; you just have to know what you really want to do, be willing, constant, responsible, humble and honest. With all this, success is almost assured”.
The Chef’s Menu, in a masterclass
“In this masterclass we have prepared the entire Chef’s Menu except for two desserts.” More than 15 recipes explained, prepared and plated during the masterclass with the students of the Master in Culinary Arts and Kitchen Management of EUHT StPOL.
“With this masterclass we wanted, above all, to explain the concept, ideas and final elaboration of the Chef’s Menu, rather than emphasize techniques such as spherifying or gelling, which your students already know”.
Two-Michelin star restaurants as an internship destination
Bo.Tic is one of the two-Michelin star restaurants where EUHT StPOL students’ can do their internships. But it is not the only one, in fact, restaurants with two Michelin stars such as Disfrutar, Cocina Hermanos Torres, Enoteca Paco Pérez, Zaranda or Moments also figure as possible destinations for internships for the students of the Master in Culinary Arts and Kitchen Management.
